Bochnia

Bochnia Travel Guide a place in south eastern Poland in the province of Malopolska. Bochnia is a town on the Raba River between the Wielickie Foothills and the Sandomierz Basin in southern Poland, about 35 km south east of the regions capital, Kraków. It has a population of about 30,000 inhabitants and is known for its salt mine which is the oldest functioning one in Europe, built about 1248.

Since Poland's administrative reorganization on 1 January 1999, Bochnia has been the administrative capital of the powiat, Bochnia County in the Lesser Poland Voivodeship. Before reorganization it was part of the Tarnów Voivodeship.

Bochnia is twinned with: Bad Salzdetfurth in Germany, Cavtat in Croatia, Kežmarok in Slovakia and Roselle in the United States. Today it is an industrial centre for the metal industry.

History of Bochnia

Bochnia is one of the oldest cities of Malopolska, (Lesser Poland). The first known document mentioning the city is a letter from 1198, where Aymar the Monk, Latin Patriarch of Jerusalem, confirmed a donation by the local magnate the Knight, Mikora Gryfit to the monastery of the Order of the Holy Sepulchre in Miechów. The discovery of a major vein of rock salt at the site of the present mine in 1248 led to the granting of city privileges, the Magdeburg rights on 27 February 1253 by Bolesław V the Chaste.

During the war when Poland was under German occupation, between 1939 and 1945 the town was known as Salzberg. At the outbreak of World War II, there were an estimated 3,500 Jews living in Bochnia, representing about 20% of the total population. An estimated 15,000 Jews were deported from Bochnia during the war mainly to the extermination camps, with a further 1,800 killed in the town and or its surroundings. About 90 Jews from Bochnia survived the war, either in hiding, in camps or in the Soviet Union. Most of them immigrated to the United States of America, Belgium or Israel.

Polish cuisine (Polish: kuchnia polska) is a style of cooking and food preparation originating from Poland. It has evolved over the centuries due to historical circumstances. Polish national cuisine shares some similarities with other Central European and Eastern European traditions as well as French and Italian similarities. It is rich in meat, especially pork, chicken and beef (depending on the region) and winter vegetables (cabbage in the dish bigos), and spices.

It is also characteristic in its use of various kinds of noodles the most notable of which are kluski as well as cereals such as kasha (from the Polish word kasza). Generally speaking, Polish cuisine is hearty and uses a lot of cream and eggs. The traditional dishes are often demanding in preparation. Many Poles allow themselves a generous amount of time to serve and enjoy their festive meals, especially Christmas eve dinner (Wigilia) or Easter breakfast which could take a number of days to prepare in their entirety.

The Polish national dishes are bigos; pierogi; kielbasa; kotlet schabowy (type of breaded cutlet); gołąbki (type of cabbage roll); zrazy (type of roulade); roast (Polish: pieczeń); sour cucumber soup (Polish: zupa ogórkowa); mushroom soup, (Polish: zupa grzybowa) (quite different from the North American cream of mushroom); tomato soup (Polish: zupa pomidorowa); rosół (variety of meat broth); żurek (sour rye soup); flaki (variety of tripe soup); and barszcz among others.
